Recipe: Honeyed Sausages
This recipe has been used by me for the past 15 years and is still as popular today as it was then.
Ingredients
2lb (900g) best quality chipolata pork sausages
8oz (225g) runny honey
2 heaped teaspoons of English mustard
4 heaped teaspoons of wholegrain mustard
Method
1. Pre-heat oven to 200C, (400F) Gas mark 6.
2. Cut the sausages into a baking tin (I always use scissors to cut sausages - it is so much easier).
3. Mix together the honey and mustards and pour over the sausages.
4. Place in the oven for 20 minutes; then remove from oven and stir.
5. Cook for a further 20 minutes and stir again. If at this stage there is a lot of liquid, pour some away.
6. Cook for a further 10 minutes until the sausages are glossy and brown - the longer they are cooked the glossier they become.
7. When cooked, cool slightly and then serve with cocktail sticks.
