Stunned by their Gold Award
After just 15-months in the cheese-making business the Heath family from Eccleshall, Staffordshire, were stunned to win the category for best cheese from small producers.
The winning cheese from John and Lucy Heath and their son, Tom, was a Staffordshire hard cheese made using milk from their 200-strong pedigree British Friesian herd run under the Bertelin prefix.
The Heaths make cheese from Staffordshire and Derbyshire recipes and the winning product is part of the Bertelin Farmhouse Cheese of Eccleshall range.
It is made using rediscovered monastic recipes, which can only be produced using milk from cows kept on Staffordshire farms and the product has recently received a Protected Designation of Origin.
The family currently produce around three tonnes of cheese a year, supplying local farm shops, farmers’ markets and a Midlands wholesaler, but are aiming to increase this to 15 tonnes annually.
The judges praised the cheese for its beautiful presentation and clear, creamy flavour.

I’m fed up with talking about the weather, but I can console myself with the fact we have grabbed every opportunity so far and progress is not too bad.
