White onion soup
THIS is a traditional Irish recipe for a classic soup of white onions cooked in milk and finished with cream and grated cheese. It is very simple, but the best things often are.
Ingredients (Serves 4)
3 Spanish onions
50g butter
1 tbspn plain flour
300ml boiling water
500ml warm milk
Salt and pepper
1 tbspn single cream
Grated red cheese to garnish
Chopped chives to garnish
Method
1. Peel the onions and slice them into fairly thick rings
2. Melt the butter in a heavy bottomed saucepan, add the onions and cook over a high heat for three minutes, stirring constantly. Do not allow them to brown
3. Stir in the flour and cook for one minute, then gradually stir in the boiling water. Season to taste
4. Cook over a moderate heat for 10 minutes, stirring from time to time
5. Gradually add the warm milk, stirring constantly
6. Cover the pan and simmer the soup over a very gentle heat for 15-20 minutes, or until the onions are very soft
7. Before serving, add the cream and garnish with the grated red cheese and chopped chives
Top tip
For a completely different flavour, sprinkle the soup with a different cheese such as Stilton, it totally alters the flavour of the soup.
