Recipe: Marmalade spice cake
A wonderfully easy tea-loaf, which my mother made weekly, evokes such memories for me of thickly buttered slices and a big mug of tea - pure comfort food.
Makes 1 x 2lb loaf
Ingredients
6oz (175g) self raising flour
3oz (75g) caster sugar
3oz (75g) butter
3oz (75g) sultanas
1 egg
2 tablespoons syrup
2 tablespoons marmalade
11/2 teaspoons mixed spice
3 tablespoons water
Method
1. Sieve flour and spice together.
2. Heat butter, sugar, syrup, marmalade and water in a pan over a low heat.
3. Add to flour mix.
4. Stir in sultanas and egg.
5. Pour the mixture into a prepared 2lb loaf tin and cook for 35-40 minutes at 180C(375F). Gas Mark 4.
6. You can eat this cake slightly warm or cold, sliced and buttered.
Top tip
I always make two at a time as they are so easy and I try to freeze one if the family let me.
