Recipe: Cranberry sauce
I think all the trimmings that go with a Christmas dinner are the best bit and this cranberry sauce recipe is so good. It even brightens up a cold turkey sandwich no end.
Ingredients
1lb (450g) fresh cranberries
Grated zest and juice of one orange
1 cinnamon stick
4 tablespoons of port
3oz (75g) caster sugar
Method
1. Put the cranberries, orange zest, cinnamon stick and port in a saucepan and bring to the boil.
2. Stir in the sugar and orange juice to taste and simmer for 10 minutes. Set aside to cool and thicken.
3. Remove the cinnamon.
4. Store in a container in the fridge.
Top tip
I often make double and use it with crushed meringues and lightly whipped cream folded together to make my Christmas version of Eton Mess. Spoon it into glasses and serve with a piece of the shortbread. Amazing and simple - my kind of cooking.
