Elderflower cordial

Ingredients
25 elderflower heads
4 sliced oranges
1 sliced lemon
1.36 kg sugar
60g tartaric acid
1.7 litres water - boiled and left to cool

Method

1. Mix all the ingredients together and leave for 48 hours, in a cool place to infuse, stirring occasionally

2. Strain through muslin and pour into sterilised bottles.

3. Once opened,keep refrigerated.

4. Dilute with sparking water before serving

Top tip

Use undiluted to flavour gooseberry and rhubarb used in fruit fools or to flavour a vinaigrette dressing
