Easter bunny shortbread in baskets
THIS recipe was sent in by Jessica Taylor of Shenley Lodge, Milton Keynes, whose tried and tested bunny biscuits are a well-received Easter present among family and friends.
Ingredients
125g softened butter
55g caster sugar
180g plain flour, sieved
Method
1. Heat the oven to 190C/375F/Gas 5
2. Beat together butter and the sugar until smooth and creamy
3. Stir in the flour until it begins to clump together
4. Place the mixture onto a floured surface and, using your hands, roll out until all the mixture is combined taking care not to over knead the dough as this will help achieve a lighter biscuit
5. Roll out to around one centimetre in thickness
6. Cut out your bunny shapes and place onto a baking tray before sprinkling with icing sugar and chilling in the fridge for around 20 minutes
7. Bake in the oven for 15-20 minutes or until they begin turning golden
8. Cool on a wire rack and then transfer into an Easter basket
