THIS week’s recipe is for chocolate and banana cake from Mrs G. Hodgson, of Dalton, Richmond.

INGREDIENTS
4oz butter
4oz castor sugar
1oz honey
1 banana
5oz self-raising flour
3 tablespoons of cocoa powder
METHOD
1 Cream butter and sugar until light and fluffy
2 Beat in the honey, then the eggs one at a time. Beat in banana
3 Sift the flour and cocoa together
4 Divide between two greased and floured 7in sandwich tins
5 Bake at 175degsC/Gas Mark 4 for 30 minutes
6 Cool on wire rack
7 Sandwich together with butter cream
